For Sauce
¼ cup Kikkoman® Hoisin Sauce
2 tablespoons fresh lime juice
1 teaspoon grated ginger, peeled
½ teaspoon minced garlic

For Stir Fry
1 tablespoon + 1 tablespoon Kikkoman® Sesame Oil, divided
8 ounces boneless skinless chicken breasts, cut into bite size pieces
1 medium red bell pepper, julienned
1 cup snowpea pods
2 cups broccoli florets
2 medium zucchinis, spiral sliced using 3 mm blade
2 tablespoon chopped roasted peanuts
⅓ cup chopped cilantro for serving

directions

  1. Stir together ingredients for sauce in a small bowl. Set aside.
  2. Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat for 2 minutes. Add chicken breast and brown for 5 minutes. Turn chicken pieces and brown for 5 minutes longer. Set aside on a plate.
  3. Return pan to stove and add remaining tablespoon of sesame oil. Add bell peppers, snow peas and broccoli to the pan and cook for 4 minutes.
  4. Add cooked chicken breast, zucchini noodles and sauce to pan. Use tongs to toss and coat evenly. Cook 4 minutes, until zucchini noodles are just tender. Serve hot garnished with chopped peanuts and cilantro.
