Ingredients

(Yield: 4 servings)

1/2 pound baby spinach leaves
6 ounces fresh bean spouts
4 ounces fresh mushrooms, sliced
1/4 cup Kikkoman Rice Vinegar
2 tablespoons Kikkoman Organic Soy Sauce
2 tablespoons safflower or canola oil
4 teaspoons sugar
1/2 teaspoon minced fresh ginger root

Instructions

  1. Combine spinach, spouts and mushrooms in large bowl.
  2. Blend vinegar, soy sauce, oil, sugar and ginger.
  3. Pour dressing over spinach mixture; toss well to coat vegetables. Serve immediately.
