(Makes 4 servings)
1-3/4 cups Pearl Unsweetened
1/3 cup packed brown sugar
1 teaspoon vanilla extract
1/8 teaspoon ground nutmeg
- Whisk together soymilk, sugar, eggs and vanilla in bowl. Stir in nutmeg, if desired.
- Place 4 individual custard cups in 9-inch square baking pan. Pour soymilk mixture evenly into cups. Add enough hot water to baking pan to reach halfway up sides of custard cups.
- Bake in 325°F oven 35 to 45 minutes, or until knife inserted near center comes out clean. Serve at room temperature or chilled.
