(Yield: 4 servings) 1 large head Romaine lettuce
6 ounces sliced deli ham (about 1/8 inch thick)
6 ounces sliced Monterey jack cheese (about 1/8 inch thick)
1 cup frozen peas, thawed
1 zucchini, cut into matchsticks
1/3 cup dried cranberries
1/3 cup Kikkoman Plum Sauce
2 tablespoons lemon juice
3 tablespoons vegetable oil
- Separate leaves from lettuce head; wash and pat dry. Cut enough lettuce leaves crosswise into 3/4-inch wide strips to measure 6 packed cups.
- Cut ham and cheese into 1 x 1/2-inch pieces. Place lettuce, ham, cheese, peas, zucchini and cranberries in large salad bowl.
- Combine plum sauce and lemon juice. Gradually whisk in oil until well blended (dressing will be thick); pour over salad and toss to coat all pieces well. Serve immediately.
