1 package (6 oz.) baby spinach leaves
1 large carrot, coarsely shredded
2 cups shredded, cooked chicken (about 1/2 deli-roasted chicken)
1-1/2 cups seedless red grapes, halved
1/2 cup coarsely chopped fresh cilantro leaves
1/4 cup Kikkoman Hoisin Sauce
2 tablespoons Kikkoman Rice Vinegar
2 teaspoons Kikkoman Soy Sauce
2 tablespoons vegetable oil
- Trim and discard ends of cucumber, then peel lengthwise with vegetable peeler to form stripes. Cut cucumber lengthwise in half; remove seed. Cut each half into thin slices.
- Combine cucumber, spinach, carrot, chicken, grapes and cilantro in large salad bowl.
- Blend together hoisin sauce, vinegar and soy sauce in a medium-size bowl. Gradually whisk in oil until well blended. Pour over salad; toss to coat all pieces well. Serve immediately.
