Ingredients

Yield: Makes 4 servings 1 can (14 oz.) vegetable broth
1-1/4 pounds fresh asparagus, trimmed and cut into 1-inch lengths
1/2 cup chopped onion
3/4 teaspoon celery salt
1/4 teaspoon black pepper
1-1/4 cups Pearl Green Tea Organic Soymilk
1 tablespoon butter or trans fat-free butter-like spread

Instructions

  1. Bring broth to boil in medium-size saucepan. Add asparagus, onion, celery salt and pepper. Reduce heat; cover and simmer, 20 minutes, or until asparagus is very tender.
  2. Stir in soymilk and butter until butter melts. Remove from heat; cool 10 minutes.
  3. Process half of asparagus mixture in covered blender container until smooth. Return to saucepan. Repeat with remaining mixture.
  4. Cook, stirring occasionally, over medium heat until heated through.
