Ingredients (Makes 4 servings)
1 can (14 oz.) vegetable broth
1-1/4 pounds fresh asparagus, trimmed and cut into 1-inch lengths
1/2 cup chopped onion
3/4 teaspoon celery salt
1/4 teaspoon black pepper
1-1/4 cups Pearl Green Tea Organic Soymilk
1 tablespoon butter or trans fat-free butter-like spread
- Bring broth to boil in medium-size saucepan. Add asparagus, onion, celery salt and pepper. Reduce heat; cover and simmer, 20 minutes, or until asparagus is very tender.
- Stir in soymilk and butter until butter melts. Remove from heat; cool 10 minutes.
- Process half of asparagus mixture in covered blender container until smooth. Return to saucepan. Repeat with remaining mixture.
- Cook, stirring occasionally, over medium heat until heated through.
