Yield: Makes 9 servings
1-1/4 cups all-purpose flour
3/4 cup cornmeal
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1-1/4 cups Pearl Creamy Vanilla Organic Soymilk
1/4 cup butter or
trans fat-free butter-like spread, melted
2 eggs, beaten
2 teaspoons vanilla extract
- Sift together flour, cornmeal, sugar, baking powder and salt into large mixing bowl.
- Blend soymilk, butter, eggs and vanilla; pour all at once into flour mixture, stirring until just blended. Turn into greased 8-inch square baking pan.
- Bake in preheated 400°F. oven 20 minutes, or until toothpick inserted in center comes clean.
- Serve warm or at room temperature.
