Yield: Makes 8 servings 1 can (15 oz.) pumpkin
2 eggs, beaten
2/3 cup sugar
1-1/2 teaspoons pumpkin pie spice
1/2 teaspoon salt
1 cup Pearl Original Organic Soymilk
1 unbaked 9-inch prepared pastry pie shell
- Blend pumpkin, eggs, sugar, pumpkin pie spice and salt in large bowl. Gradually stir in soymilk. Pour mixture into pie shell.
- Bake in preheated 425ºF. oven for 15 minutes. Reduce oven temperature to 350º; cover edge of crust with strips of aluminum foil. Bake pie 40 minutes longer, or until knife inserted near center comes out clean.
- Cool completely on wire rack. (Refrigerate any remaining pie.)
