(Makes 4 servings) 2 eggs, beaten
2/3 cup Pearl Creamy Vanilla Organic Soymilk*
1 tablespoon grated fresh orange peel
1/4 teaspoon ground cinnamon
8 slices dry white bread
Butter or trans fat-free butter-like spread &
maple-flavored syrup, as desired
- Beat eggs together with soymilk, orange peel and cinnamon in shallow bowl or pie pan.
- Heat lightly oiled griddle or large skillet over medium heat.
- Dip bread slices into egg mixture, thoroughly coating both sides. Place on griddle and cook 3 to 4 minutes on each side, or until golden brown.
- Serve warm with butter and syrup.
*Or, substitute with Pearl Original Organic Soymilk or Tropical Delight Soymilk.
