Ingredients

Yield: Yield: 4 servings

3/4 pound ground beef
3/4 teaspoon garlic powder
2 medium zucchini (or crook neck squash) cut in half lengthwise,
then cut crosswise into 1/4-inch thick slices
1 small onion, chopped
1 can (14-1/2 oz.) tomatoes, quartered
1/2 cup uncooked rice
1/4 cup Kikkoman Soy Sauce
1-1/2 teaspoons dried basil leaves, crumbled

Instructions

  1. Crumble beef into 2-quart microwave-safe baking dish; sprinkle with garlic. Cover; microwave on High 3 minutes.
  2. Stir in remaining 6 ingredients and 1/2 cup water. Cover; microwave on High 27 minutes, or until rice is tender. Stir frequently.
