Ingredients

Yield: Makes 6 servings

2-3/4 cups Pearl Creamy Vanilla Organic Soymilk
1 egg, well beaten
1/3 cup sugar
3 tablespoons quick cooking tapioca

Instructions

  1. Combine soymilk, egg, sugar and tapioca in medium saucepan; let stand 5 minutes.
  2. Cook, stirring constantly, over medium heat until mixture comes to a full boil. Remove from heat; cool 20 minutes.
  3. Stir pudding and pour equally into 6 individual dessert dishes.
  4. Serve warm, or cover with plastic wrap and refrigerate until thoroughly chilled.
