Roasting
Come in from the cold this winter to a delicious roast dinner. The savory aromas will engulf your taste buds and instantly warm your soul. Roasting is an excellent cooking technique that brings out the flavors of meat and poultry, and roasting with Kikkoman Sauces only further enhances those natural flavors. The dry heat of the oven creates a rich brown crust, which is even more pronounced by marinating before, or basting while the dish is being roasted. This versatile cooking method works equally well for everything from Cornish hens and pork tenderloin to a whole turkey. Here are a few roasting facts to keep in mind:
The high heat of roasting transforms proteins and sugars on the surface of the meat into flavorful, rich brown compounds.
Roasting works well for tender cuts that don't need moist heat to break down muscle fiber.
Roasting is ideal when preparing a large meal, since it doesn't require a lot of attention from the cook and leaves the stovetop available, so the chef is free to focus on making the side dishes while the entrée is roasting.

Roasting Tips
To facilitate proper browning, be sure to preheat your oven if roasting for less than 30 minutes.
Brown smaller cuts of meat in a hot skillet before placing in the oven to ensure good color without overcooking.
Use an instant-read meat thermometer to tell if meat has reached the required internal temperature, and remember that the temperature will go up 5 to 10 degrees while the meat is "resting" (also known as "standing").
To minimize loss of juices, allow larger cuts of meat to "rest" before slicing.

Kikkoman Enhances Roasting
The flavors of Kikkoman Sauces are ideal complements to the roasting method.
Kikkoman Soy Sauce and Lite Soy Sauce used in marinades lend deep, rich flavor and color to smaller cuts of meat. Brush Kikkoman Soy Sauce or Lite Soy Sauce onto larger cuts of meat for additional color and flavor.
For steaks, chops or smaller roasts, Kikkoman Teriyaki Marinade & Sauce can be used "as is" or combined with other ingredients to create your own flavorful marinades.
Kikkoman Teriyaki Baste & Glaze brushed on during the final minutes of cooking creates an appetizing glaze and adds extra flavor.
