Celebrate National Vegetarian Month in October
Even if we don’t want to swear off meat altogether, most of us know we should be eating more vegetables than we do. October is National Vegetarian Month, and it’s a great time to give more vegetable dishes a try, with the bounty of fall produce available in farmers’ markets and supermarkets. Everything from glossy purple eggplants and multicolored bell peppers to fall squash and late season tomatoes is in abundance now.
- A good way to reap all the health benefits that vegetables provide is to eat by color to ensure that you’re getting a range of phytonutrients—the naturally occurring compounds in plants that help promote health and prevent disease. Try to include green vegetables like kale and green beans, orange sweet potatoes and carrots, red tomatoes and purple fruits like grapes and blueberries into your meals each day.
