Kikkoman Chicken Brine

Ingredients:

2 Cups Kikkoman Soy Sauce
2 Gallons water
1 ½ Cups Kosher Salt
8 Cloves minced garlic
2 Tbsp. whole black peppercorns
4 dried bay leaves
¼ Cup Worcestershire sauce
¾ Cup brown sugar

Instructions:

Combine all ingredients in a large food safe container. Whisk until salt and sugar are totally dissolved. Place meat into brine. Leave in brine about 1 hour per pound of meat. Once done brining, pat meat dry before cooking.  Roast the chicken and baste with Kikkoman Soy Sauce.

Simply Savory Burger

Ingredients:

1-1/2  pounds lean ground beef                
2 tablespoons Kikkoman Soy Sauce            
1/2 teaspoon sugar
1 teaspoon salt
1 teaspoon black pepper

Instructions:

In a large bowl, combine the ground beef, soy sauce, sugar, salt and pepper.  Mix together well.  Divide into 4 or 6 large round balls.  Press down on each ball until a round patty is formed.   Grill, fry, or broil to your desired doneness.

Kikkoman ‘N Cola Ribs

Ingredients:

2 tbls Kikkoman Soy Sauce
1 can can cola, any kind
1 cup ketchup
¼ cup Kikkoman Rice Vinegar
2 tbls molasses
1 teas mustard powder
2 teas chili powder
½ teas cayenne pepper
1 teas garlic powder
1 teas paprika
1 teas ginger powder

Instructions:

Combine all ingredients in a large bowl, whisking to combine.  Brush on both sides of the ribs during the last 15 minutes of cooking.

Kikkoman Salad Dressing

Ingredients:

1 Tbsp Kikkoman Soy Sauce
2 Tsps Dijon Mustard
½ Shallot Minced
1 Tsp Honey
2 Tbsp Balsamic Vinegar
½ Cup Extra Virgin Olive Oil

Instructions:

Salt & Pepper to taste

Chili-Mirin Shrimp Saute

Ingredients:

3 Tbs olive oil
2 garlic cloves, minced
1 pound large shrimp, peeled and deveined
½ cup Kikkoman Soy Sauce
¼ cup mirin (rice cooking wine)
2 tsp chili powder

Instructions:

In a large sauté pan over medium heat, heat the olive oil.  Add the garlic and sauté for 2 minutes.  Then add the shrimp; sauté for 1 minute.  Add soy sauce, mirin and chili powder, stirring to combine.  Simmer until the shrimp is cooked through about 5-6 minutes.

Savory Mignonette Sauce

Ingredients:

2 small    shallots, minced
1 tbls Kikkoman Soy Sauce
½ cup Kikkoman Seasoned Rice Vinegar
1 ½ teas black peppercorn, crushed

Instructions:

Place the minced shallots and any liquid released from them in a non-reactive (glass or pyrex) bowl. Add the soy sauce and  rice vinegar. Stir with a fork. Add the freshly crushed black pepper. Stir with a fork.   Cover with plastic wrap and chill in the refrigerator for a minimum of four hours.

Kikkoman Chocolate Ganache Sauce for Favorite Chocolate Cake

Ingredients:

2 Tbsp Kikkoman Soy Sauce
12 oz Heavy Cream
6 oz Bittersweet Chocolates

Instructions:

Chop up chocolate.  Heat heavy cream.  Pour heated heavy cream over chocolate and let sit for a minute.  Whisk until smooth.  After the ganache is completely melted remove from the heat and whisk in Kikkoman Soy Sauce.  Pour Sauce over Chocolate Bundt Cake.

Green Apple & Umami Martini

Ingredients:

2 oz green apple Juice (fresh)
1 oz Ginger Vodka
1 oz simple sugar
½ oz Kikkoman Soy Sauce
½ oz lime juice (fresh)
¼ teas Pickled Ginger Juice
1 tbls sugar

Instructions:

Place cocktail glass in freezer to chill.  Combine the ingredients in a shaker, fill it halfway with ice, and stir or shake vigorously until well chilled, about 20 seconds. Remove the glass from the freezer, coat the rim with sugar, strain into the chilled glass.
